Gluten Free: is a term given to product that do not contain Gluten

What is Gluten?

Gluten is a protein that is found in wheat, barley oats & rye.  Don’t forget malt is a derived from gluten so do not eat anything with malt in it.

Who need a gluten free Diet

People with intolerance to dietary gluten are know a celiac or coeliac  (pronounced seel-ee-ak)
Celiac disease is autoimmune disease that affects your small intestine lining. If gluten is eaten this in turn affects the small intestine lining cause it to be inflamed and therefore cannot absorb any of the nutrient in food eaten.

Most celiacs need to keep well clear of gluten as it can cause serious side effects.

below are some of the symptoms which may occur singularly or in combination:
Fatigue, weakness and lethargy, Tiredness
Anaemia
Flatulence and abdominal distention
Diarrhoea – can be quite severe but may not necessarily be obvious
Constipation – can be experienced rather than diarrhoea although many people do not experience either and some experience both
Cramping and bloating
Nausea and vomiting
Weight loss – although many do not lose weight and some can even gain weight
Large, bulky, foul stools (steatorrhea)
Poor weight gain
Delayed growth or delayed puberty
Irritability

Gluten Free Brownies

Makes  12

Ingredients

  • 125g Butter
  • 125g Chocolate
  • 1 cup brown sugar
  • 1 tsp Vanilla
  • 2 eggs (beaten)
  • 1 Cup GF Flour
  • 3/4 cup Nuts

Method

  1. Preheat the oven to 180°C. Grease and line the base of an slab cake pan.
  2. Melt the butter and chocolate in a heatproof bowl over low heat or in microwave
  3. Add sugar and stir until disolved
  4. mix eggs flour and walnuts
  5. Pour into slab plan
  6. Cook for 30 minutes at 180°C
  7. Cool in pan
  8. Sprinkle with icing sugar
  9. Cut and serve
  • variation – stir through chocolate bit or cream cheese & sugar or change to white chocolate and white sugar,
  • Note: Brownies will keep for 2-3 days in an airtight container in the fridge or can be frozen for up to 2 months.
